Food Filosophy…
It’s not often someone waxes poetic about the philosophy of food, but perhaps I’ll take a moment to make that exception.
I’m not into the “5 ingredient dinner,” the “15 minute family meal,” the “best supper ever from leftovers.” I want to cook meals that are delicious, that have roots, that aren’t concerned with how long it takes or where or not I have to use just “what’s in the fridge.”
So what I do… (well, not always, but mostly) is find something that will be pleasing, tasty, and challenge me a bit to create something amazing for “ME,” and sometimes, perhaps a special someone else as well.
Good food takes time. It takes experimentation, playing with recipes to suit your own palate. It takes making mistakes, burning a thing or two, oversalting a dish, using that avocado that wasn’t quite ripe enough, realizing as you are cooking that you forgot to buy an ingredient, or just plain realizing this dish “ain’t what I thought it would be.” It takes being picky about your ingredients, understanding how to find quality foodstuffs and when they are at their peak, being able to tell exceptional from just OK. Learning always. Retrying always. Being ready for surprises always. My food “Filosophy” in a word…

What I am into is finding new and exciting flavors. Learning to make things from scratch that I usually just buy. Trying new and challenging techniques. Learning to cook a dish with ingredients I’ve never even heard of before.
So, “5 ingredient dinner” begone.
